Simple Sweet Potato Biscuits - These biscuits make great sandwiches when paired with leftover ham, turkey or beef. OR serve with golden honey for a mouthwatering snack. From Angela Johnson, Atlanta, GA
Jalapeno, Orange, and Cucumber Salad
Yield: 4 cups
Prep: 20 min, Chill 1 hour

2 cucumbers, peeled
4 -5 large oranges, peeled and sectioned (about 4 cups)
1/2 cup red onion, thinly sliced
2 Tbsp fresh lime juice
2 tsp paprika
1/2 tsp salt
1 jalapeno pepper, seeded and minced
1 small head iceberg lettuce, chopped into 1 inch pieces
1. Cut cucumbers in half length-wise; remove seeds, and cut into thin slices.
2. Combine cucumbers, oranges, and next 5 ingredients; toss gently. Cover and chill at least 1 hour or until ready to serve.
3. Pour orange mixture over lettuce in a large bowl, toss gently. Garnish with cilantro if desired.

Simple Sweet Potato Biscuits
Yield: 2 dozen biscuits
Prep: 15 minutes
Bake: 10 minutes

1/3 cup light butter
2 3/4 cups reduced-fat all-purpose baking mix
1 cup mashed sweet potato
1/2 cup 2% reduced-fat milk
1. Cut butter into baking mix with a pastry blender or 2 forks until mixture is crumbly. Whish together sweet potato and milk; add to butter mixture, stirring with a fort just until dry ingredients are moistened.
2. Turn dough onto a lightly floured surface; knead gently 4 or 5 times. (Dough will be moist) Pat or roll dough to 1/2 inch thickness; cut with a 2-inch round cutter. Place biscuits on lightly greased baking sheets.
3. Bake at 450 for 10 minutes or until golden brown.
