The following recipes have been adapted from Debra Wasserman's book Conveniently Vegan
Banana/Oatmeal/Coconut Bar Cookies for Ole' Saint Nick
2 large ripe bananas, peeled and mashed
2 cups quick rolled oats
1 cup shredded coconut
1/4 cup maple syrup, honey, pure Agave nectar or other natural liquid sweetener
Preheat oven to 350 degrees. Mix ingredients together in a large bowl. Flatten dough in a 9"x9"x2" greased baking pan. Bake for 30 minutes. Cool pan on a wire rack when removed from oven. Once cool, slice into 16 square cookies and serve.
Makes 16 cookies.
Mandarin Pancakes for Christmas morning
2 cups unbleached whole grain flour
1 Tbs egg replacer or 2 eggs (preferably organic)*
2 teaspoons baking powder (aluminum free is available)
10.5-ounce can mandarin oranges, including juice
1-cup water
Mix all ingredients together in medium-size bowl. Pour batter onto a lightly oiled frying pan or griddle. Cook pancakes over medium heat for 5 minutes on each side or until bubbles circle the pancake, and flip. Serve warm.
Makes 5 large or 10 small pancakes.
*egg replacers:
2 tbsp corn starch = 1 egg
2 tbsp arrowroot flour = 1 egg
2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
1 banana = 1 egg in cakes.
