Chicken with Straw Mushrooms
3 lbs chicken
2 to 3 lb straw mushrooms
1/4 lb carrots
1/4 lb red onions
2 soup spoons red vinegar
1/2 lb ripe tomato
1/2 soup spoon flour
1/2 lb crab meat, already boiled
2 soup spoons soy sauce
garlic, red pepper powder, raw sugar, olive oil, and cilantro
1 tsp ground alum
1. Clean the chicken. Cut the meat into 1/2 inch pieces. The chicken bones can be cooked to make 1/2 bowl of soup.
2. Clean the mushrooms and cut into halves.
3. Cut carrots and cut the tomatoes in 2 horizontal halves. Take out the seeds and cut into small pieces.
4. Put oil in a pan to boil. Add onion and garlic.
5. Put chicken pieces in to fry. Season with soy sauce and taste. When the chicken is done, put into a dish.
6. Put oil in the pan again and bring to a boil. Add more garlic, onion and carrots.
7. Add straw mushrooms and cook 5 minutes.
8. Put in the fried chicken, crab meat, and tomato.
9. Add the flour which has been diluted in the bowl of soup. Season again with soy sauce, sugar, vinegar, and pepper. Taste. (The taste will be sweet and sour.)
When serving, display around the dish, respectively, pieces of carrots and cilantro. In the middle of the dish, display a small mass of cilantro trimmed with red pimiento.
