Jack-o-lantern Popcorn Balls for Halloween

Instead of artificially sweetened candy, gums, and unhealthy Halloween choices, bake some “less toxic” treats for the kids for Halloween fun and autumn school functions.

½ cup unsalted butter
16 oz regular marshmallows
20 cups popped popcorn
fruit roll-ups and fruit leather

Make popcorn balls in a 3-quart bowl by mixing ½ cup unsalted butter with one 16 oz. package regular marshmallows. Cook on medium high and stir until smooth.

Pour over 20 cups popped popcorn (two 3.5 oz pkgs microwave popcorn, popped). Stir well until coated. Shape into popcorn balls. Cut Jack-o-lantern face shapes out of fruit roll-ups or fruit leather, and place shapes onto the warm popcorn balls.


Adzuki Bean Hummus

2 tbs fresh parsley (or dried)
1-2 garlic cloves, minced (to taste)
2 C cooked Adzuki beans
½ C tahini (sesame seed paste)
2-4 tbs lemon juice
¼ C water
½ tsp Celtic sea salt
dash of Tabasco Sauce
½ - 1 tsp Ground cumin (optional
Flax oil (optional)
Paprika for color (optional)

1. Combine parsley, minced garlic and cooked adzuki beans in food processor or blender. Process until smooth
2. Stir tahini until smooth and add to blender along with rest of ingredients. Process until very smooth, adding water if necessary
3. Hummus should be thin if served as a dip - thick if used as a spread
4. For a nice presentation, drizzle flax oil over hummus and sprinkle paprika on top
