Two scrumptious cookie recipes for the Fall season:
PUMPKIN COOKIES
1 c. sugar
1 c. canned (or 1-1/2 c. fresh) pumpkin
1/2 c. butter
1 tbl grated orange peel
2 c. whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp salt
1/2 c. raisins
1/2 c. chopped walnuts
Light Brown Glaze
Preheat oven to 375 F. Mix sugar, pumpkin, shortening and orange peel. Stir in flour, baking soda, baking powder, cinnamon and salt. Stir in raisins and nuts.
Drop dough by teaspoonfuls onto ungreased cookie sheet. Bake until light brown, 8 to 10 minutes. Immediately remove from cookie sheet; Cool. Spread with Light Brown Glaze (see below). About 4 Dozen Cookies.
LIGHT BROWN GLAZE
1/4 c. unsalted butter
2 c. powdered (or raw) sugar
1 tsp vanilla
1-2 tbl milk (soy or rice milk are fine)
Heat butter in 11/2-quart saucepan over medium heat until delicate brown. Stir in powdered sugar and vanilla. Stir in milk until smooth.
CARROT-COCONUT COOKIES
(Next time you make carrots for dinner, cook some extra to use in these cookies).
1 c. mashed cooked carrots (about 4 medium)
3/4 c. sugar
1 c. unsalted butter, softened
2 eggs
2 cups whole wheat flour
2 tsp baking powder
1/2 tsp sea salt (optional)
3/4 c. shredded or flaked coconut
1/2 recipe Orange Butter Frosting
Pre-heat oven to 400 degrees F. Mix carrots, sugar, butter and eggs. Stir in flour, baking powder, and salt. Stir in coconut.
Drop dough by teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake until almost no indentation remains when touched, about 8 minutes.
Immediately remove from cookie sheet; Cool. Frost with Orange Butter Frosting. About 5 dozen cookies.
ORANGE BUTTER FROSTING
3 c. powdered (or raw) sugar
1/3 c. unsalted butter, softened
1-1/2 tsp orange juice
About 2 tbl milk (soy or rice milk is fine)
2 tsp grated orange peel
Mix powdered sugar and butter. Stir in the orange juice and milk. Beat until frosting is smooth and of spreading consistency. Stir in the grated orange peel.
