Two awesome barbeque sauces from my mom's favorite recipes:
BARBEQUE SAUCE FOR CHICKEN (originally from Pres. LBJ)
I lb. unsalted butter
1/2 cup lemon juice
1/2 cup cider vinegar
1/2 cup catsup
1 bottle horseradish
1 tbl Tabasco
2 tbls Worcestershire sauce
1 tsp sea salt (optional)
Mix all ingredients together in a pan and bring to a boil. Set aside.
Brown chicken on the grill before brushing the sauce onto the meat. Continue brushing the chicken with the sauce as you flip the meat over. It will slightly blacken.
Heat the remaining sauce and serve at the table for dipping.
(The sauce has a very poignant smell, but the taste is like nothing you've ever tasted before!)
SHISKABOB MARINAIDE
1/2 c cold pressed oil
1/4 c soy sauce
1/2 c red wine
2 tbls candied ginger chopped
2 tbls ketchup
1/2 tsp black pepper
Place all ingredients in a bowl and mix well. Cut meat into cubes and marinate overnight in the refrigerator. Remove and grill on skewers with fresh mushrooms, pearl onions, yellow and red peppers.
