May's Healthy Recipe
May's recipes are from our kitchen at The Hullistic Network. Enjoy a wild salmon dinner with just a taste of dessert.
Smoke Wild Salmon on the Grill
Ingredients:
Filleted North Atlantic or Alaskan salmon
Fresh dill, chopped
1 organic lemon, sliced in rings
3-4 tablespoons organic unsalted butter, sliced
Fresh ground peppercorns
1 clove garlic, minced or 1/2 teaspoon prepared minced garlic
Prepare the grill, adding a chip of hickory wood for flavor. Let the coals cool down a bit, red but no flame. Cut a piece of aluminum foil large enough to fold over salmon, forming a tent. Place half of the butter slices on the foil and
place salmon fillet(s) on top of the butter.
Place the other half of the butter slices on top of the salmon. Grind peppercorns over the fillet, sprinkle with minced garlic, and cover the fillet with fresh dill. Place the lemon slices over the seasoning.
Close the foil, and place fillet on the grill, with lid closed. Let the salmon smoke for at least 30 minutes, or until the liquid at the bottom of the foil bubbles and the salmon is flakey. Don't rush the salmon - let it cook slowly.

Lemon Rings
Modified from: The Art Of Cooking For The Diabetic
Ingredients:
1-1/2 cups all-purpose whole wheat flour
1/4 cup natural unprocessed sugar (I use Sucanat®)
grated zest of 1 organic lemon
6 tablespoons organic, unsalted butter, cut into small pieces
1 large free-range egg
1 egg white, beaten lightly
Preheat oven to 375 degrees. Prepare a cookie sheet with a brush of cold-pressed olive oil. Using a food
processor, combine all ingredients except egg white. Flatten dough slightly; cover in plastic wrap. Chill 30 minutes.
Break off a tablespoon of dough; roll to form a 3" (inch) pencil-shaped rope. Attach edges to form a ring. Place on prepared cookie sheet. Continue with remaining dough. Brush tops of cookies with lightly beaten egg white. Bake 10 to 12 minutes or until lightly golden.
Remove cookies from baking sheet and cool on a wire rack. Store in a tightly covered tin.
Makes 2 dozen cookies
1 serving = 2 cookies
