Chili-Rubbed Flounder in Salsa

April's Healthy Recipe is from The Hullistic Network. Just say "chilli and salsa" to a Texan, and we're interested, especially when used with flounder. Here's our Chili-Rubbed Flounder in Salsa.

Chili-Rubbed Flounder in Salsa

Ingredients:

10 flounder fillets;
1/4 cup olive oil;
1/8-cup chilli powder;
Salt and pepper to taste;
20 oz prepared salsa.

Method

  1. Combine olive oil and chilli powder, and pour over fillets.
  2. Marinate fillets in refrigerator for 15 minutes.
  3. Season fillets with salt and pepper.
  4. Preheat grill.
  5. Grill each portion of flounder to desired doneness, about 2-3 minutes per side.
  6. Top with salsa and serve immediately.
