Our first recipe this month is in honor of St. Patrick's Day - Special Irish Beef Stew. Then for those of you who are not feeling up for a pot of gold, we have a tasty Green Chili Stew.
Special Irish Beef Stew
Ready in: 1 hr 20 min
Serves: 6
2 teaspoons vegetable oil
1 pound lean beef stew meat
2 tablespoons all-purpose flour
1 small onion, chopped
2 cups sliced fresh mushrooms
6 cloves garlic, minced
1 (6 ounce) can tomato paste
2 cups beef broth
1 (12 fluid ounce) can or bottle Irish stout beer
4 cups sliced carrots
2 large potatoes, peeled and diced
1 tablespoon cornstarch
1 tablespoon cold water
1/4 cup chopped fresh parsley
Prepare in a Dutch oven or large pot over medium-high heat. Coat beef cubes with flour, shaking off the excess. Fry beef cubes until browned on all sides. Remove from the pot. Add the onion, mushrooms, and garlic to the pot, and cook stirring constantly until onion is tender, about 3 minutes.
Return beef to the pot, and stir in tomato paste, beef broth, and beer. Add potatoes and carrots, cover, and simmer over low heat for about 1 hour. Mix together the cornstarch and cold water. Stir into the stew, and simmer until thickened. Sprinkle with parsley and serve.

Green Chile Stew
Ready in: 1-2 hrs
Serves/Makes: 6
1/2 pound tomatillos
4 fresh green chiles -- roasted and peeled
1 onion -- chopped
1 clove garlic -- minced
1 cup vegetable broth
1/2 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon oregano
1 onion -- chopped
1 green or red bell pepper -- chopped
2 cloves garlic -- minced
2 tablespoons extra virgin olive oil
3 carrots -- sliced
3 potatoes -- cubed
15 ounces stewed tomatoes -- drained
30 ounces pinto beans -- rinsed and drained
7 ounces canned chopped green chiles
2 cups vegetable broth
salt and pepper to taste
Husk and wash tomatillos. Slice into wedges. In a large saucepan, combine tomatillos, chiles, onion, garlic, broth, cumin and oregano. Bring to a boil, reduce heat, and simmer 20 minutes. Pour into a blender and pulse to desired consistency.
In a large pot, saute onion, pepper, and garlic in oil. Add remaining ingredients and tomatillo puree and bring to a boil. Reduce heat, cover and simmer for 1 hour. Serve with warm tortillas.
