Steamed Vegetables with Lemon Sauce
From Dale Figtree, PhD
EAT SMART: A GUIDE TO GOOD HEALTH FOR KIDS
Choose up to three (3) pounds of two or more vegetables. Different colors insure a good variety of nutrients and an attractive color combination. It is best to steam the vegetables and as whole as possible because this preserves the most vitamins. After they are cooked, they can be cut into smaller pieces. Most vegetables only take about 8 to 10 minutes to steam. Kale takes 20 minutes, but it's worth the wait. After cooked, pour the lemon sauce over the vegetables and serve.
Lemon Sauce For Vegetables
Juice of one (1) lemon
One 1 clove garlic, crushed
Pinch of mint leaves
1/4 cup water
Put all ingredients into a jar and shake well. Pour the lemon sauce over vegetables and serve.
